Chef's Secrets: Charbroiled Chicken and Vegetable Salad

A recipe from Narek Avagyan, head chef at the Cafe Ararat in the Ararat Park Hyatt Moscow hotel.

Ingredients:

70g chicken
20g cucumber
20g tomato
10g lavash
20g sour cream
5g frisee lettuce
1g garlic
3g walnuts
2g vegetable oil
salt, pepper

Marinate the chicken with salt, pepper and sour cream. Chargrill the chicken until it has a golden crust.

Brown the lavash in vegetable oil with garlic, salt and pepper.

Remove the seeds from the cucumber and tomato and cut them into pieces. Add the frisee lettuce.

Cut the chicken into strips and add it to the salad along with the walnuts. Add plenty of sour cream, salt and pepper. Then add the lavash and mix.

Serve cold.
